Makers of the 'Kenshin' label of sake since 1812
Ikedaya Brewery is one of several 'shinise' (old businesses) in Downtown Itoigawa. The storefront is built in a traditional Edo Period style and sells the many varieties of sake produced in the brewery. We've been making sake here in the UNESCO Global Geopark town of Itoigawa for over 200 years. 7 times running gold medal winner of the National New Sake Awards. We are located near the starting point of the Salt Trail, where the beautiful tale of Uesugi Kenshin's compassion for his enemy Takeda Shingen was born. Our sake label, 'Kenshin' is named for that warlord. Since our founding, we have perfected our craft in producing a sake that suits the palate of our many customers. Our 'toji' (brewmaster) combines pure water from the Hakuba Foothills with carefully selected sake rices including Yamada Nishiki and Gohyakumangoku to craft the perfect sake with a sharp bite and smooth finish.
The sake produced here is sold under the label "Kenshin." It is produced using only 100% Niigata-grown rice. The most popular variety of Kenshin is Junmai Ginjo, noted for its gentle aroma and rich, dry flavor which finishes clean. It pairs well with tuna sashimi. ≪Brewmaster's Recommandations≫ ●Kenshin Daiginjo (1.8L) 6,480yen ●Kenshin Junmai Ginjo (1.8L) 2,862yen ●Kenshin Tokubetsu Honjozo (1.8L) 2,095yen
