Tabedokoro Nakashima is a local institution, operating for decades on the south side of Itoigawa Station. The most popular dish on the menu is ramen, which they prepare simply using a recipe which hasn't changed since they opened. Make sure to try the udon or one of the many rice bowls available as well!
